The soya used has been cultivated considering all the environmental aspects to be considered to obtain the best possible quality crop. A warm environment has been maintained with temperatures between 20 and 30ºC with mixed indoor/outdoor growth according to needs.

Natto is a food prepared from soya beans that are fermented in controlled media with the probiotic (food-grade) bacterium Bacillus subtilis.
This production process dates to Buddhist times when monks developed this fermentation system to consume soya for longer and with added nutritional properties.
The Natto production process is a delicate one and must be closely monitored to ensure not only its quality (and that the Nattokinase it generates is functional) but also its safety (and that secondary reproduction of Lactobacillus natto does not occur).
